Cold gazpacho is a refreshing and light soup that comes from sunny Spain, traditionally made in the summer heat. The base of the dish is ripe tomatoes that give it a rich flavor with sweet and sour notes, while cucumbers and sweet peppers add freshness. Lime and white wine vinegar create a subtle acidity that highlights all flavor nuances, and olive oil makes the texture smooth. Gazpacho is served chilled, making it perfect for hot days. This soup is not only tasty but also healthy, rich in vitamins and antioxidants. Gazpacho can be served as a light appetizer before main courses or as a standalone dish that refreshes and invigorates. Its bright color, rich aroma, and pleasant texture make it a favorite summer treat for many.
