Beef bozbash with chickpeas and vegetables

Bozbash is a traditional Azerbaijani dish made from beef, chickpeas, and vegetables. Its roots go back centuries when shepherds and nomads prepared nutritious soups for long journeys. Soak the chickpeas for a few hours. Then take the beef, cut it into cubes, add the chickpeas, and pour in water (4 liters). Put it to cook on low heat.
- Boneless beef: 800 g
- Chickpeas: 200 g

Then slice the onion into half rings, dice 2 fresh tomatoes and 3 canned tomatoes, and fry. Cut the potatoes into slices.

Add 3 bay leaves to the broth while it cooks, remove them once it boils. Cook the broth for 1.5–2 hours.

Then add the sautéed onions and potatoes, and cook until the potatoes are done. Add a little turmeric and basil, season with pepper and salt, and add herbs.
