Chicken soup with homemade noodles is a warm memory of Russian cuisine, cozy and hearty like a grandmother's lunch. Its history traces back to village traditions where noodles were made by hand, giving the dish a special soulfulness. The rich broth infused with bay leaf and pepper aromas combines with tender pieces of chicken, while the homemade noodles add unique texture to the soup. Light notes of carrot and potato make the taste soft and harmonious, while herbs add freshness. This soup is perfect for cold days when you want to warm up and feel care in every sip. It is prepared not only at home but also in cozy cafes, offering guests a taste of childhood and home comfort.

1
We wash the chicken, place it in a pot, and cover it with water (so the water covers the chicken), add a whole onion, fragrant and black pepper, bay leaf, and boil the broth until the chicken is cooked. When the chicken is cooked, we take it out of the pot.
- Chicken: 0.5 piece
- Onion: 0.5 piece
- Bay leaf: to taste
- Ground black pepper: to taste
2
Cut the potatoes into cubes. Cut the carrots.
3
After removing the cooked chicken from the broth, add potatoes and carrots, and cook them until ready.
- Potato: 300 g
- Carrot: 0.5 piece
4
Now we prepare the noodles. Sift flour (about 0.5 cup) onto the table and add salt. Make a small well and pour in a whisked egg. Gradually mix the flour into the egg with a spoon until it absorbs as much flour as it can. Then knead the dough by hand, adding enough flour to make a stiff dough. Knead the dough well and divide it into two halves. Roll each piece into a sheet about 1 mm thick, sprinkling flour on both the dough and the surface while rolling it out. Roll each sheet into a tight tube, sprinkling with flour before rolling to prevent sticking when cutting the noodles. Cut the noodles thinly.
- Chicken egg: 1 piece
- Wheat flour: to taste
5
To fully spread the noodles and remove excess flour, lightly toss the noodles above the table with your hands. If preparing in advance, it should be dried and then stored like any pasta. If cooking while making soup, there's no need to dry it; just add the cut noodles directly to the soup (don't forget to shake them well).
6
Now we add the shredded chicken meat, removed from the bones, to the broth. Next, we drop the noodles into the broth and cook for 3 minutes.
- Chicken: 0.5 piece
7
Add salt, curry, and ground black pepper to taste, as well as chopped greens, and boil for 1 minute.
- Curry: 1 teaspoon
- Salt: to taste
- Ground black pepper: to taste
- Dill: to taste
