Pumpkin cream soup with cream and bacon

Pumpkin cream soup with cream and bacon is the embodiment of comfort and warmth in a bowl. Its history traces back to European cuisines where seasonal vegetables were paired with rich creamy textures. Velvety pumpkin, roasted to caramelization, offers a gentle sweetness that is perfectly complemented by the light tang of cream. Garlic and sun-dried tomatoes add zest, while crispy bacon provides an exquisite salty crunch. Light airy cream transforms the soup's texture into something almost ethereal. Serving it with crispy baguette toasts makes this dish a complete gastronomic delight that warms not just the body but also the soul.

1
Peel the pumpkin and remove the seeds inside. Cut it into small pieces (3-4 cm), coat with olive oil, and place in an oven preheated to 200 degrees for 15-20 minutes.

Finely chop a clove of garlic and sauté it in butter in the pot where our soup will be.

Remove the pumpkin from the oven and add it to the garlic. Pour in broth (to your taste, meat, chicken, or vegetable, can also be replaced with milk) and use an immersion blender to turn all the contents of the pot into a creamy mass, seasoning with salt and pepper to taste. Add a tablespoon of dried tomatoes. Let it simmer on low heat.
