Gazpacho St. Petersburg style

Petersburg-style gazpacho is an original interpretation of the famous Spanish cold soup, adapted to Russian taste traditions. In this recipe, the classic combination of tomatoes, cucumbers, and sweet peppers is enriched with the aroma of cilantro, the spiciness of garlic, and a light acidity from lemon juice. The main difference is the addition of croutons made from ciabatta that give the soup a rich texture and a splash of sherry that adds a touch of sophistication. Gazpacho is served chilled, making it an ideal refreshing dish for summer days. Its flavor is a harmony of fresh vegetables, mild spice heat, and the tenderness of broth soaked with croutons. It’s not just a soup; it’s a true gastronomic journey that combines Russian boldness and Spanish elegance in one glass.
