Cheese soup with semi-smoked sausage is a cozy and hearty dish of Russian cuisine that warms the soul and awakens the appetite. Its roots go back to the traditions of home cooking when housewives aimed to create filling and aromatic soups from simple yet tasty ingredients. The delicate creamy base made from melted cheese harmoniously combines with the spiciness of semi-smoked sausage, creating a rich, slightly smoky flavor. Potatoes add density to the soup while sautéed vegetables provide a sweet depth. This soup is perfect for lunch on a cold day or simply for those who appreciate rich and intense flavors. It can be served with rye bread or fresh herbs, adding a touch of freshness and aroma. Simple to prepare yet exquisite in taste, it will become a family favorite.

Pour water into a pot, add salt, and once it boils, add the processed cheese (to cook better, keep them in the freezer for 10 minutes beforehand, then you can grate them on a coarse grater. Or just break them into small pieces by hand).
- Processed cheese: 2 pieces
- Salt: to taste

While the cheese melts, we cut the sausage (ham works too) and potatoes into strips, adding them to the boiling cheese broth — let it cook for now.
- Semi-smoked sausage: 300 g
- Potato: 3 pieces

In the meantime, we chop the onion finely, grate the carrot, fry everything in vegetable oil, and add it to the pot. Bring to a boil again. The soup is ready!
