Tomato soup with beef is a rich, aromatic dish of Bulgarian cuisine that combines the depth of meat broth with the brightness of tomatoes. Its history traces back to traditional village recipes where tomatoes added a rich flavor and a slight tang to meat dishes. Beef slowly simmered over fire becomes tender, while vegetables enhanced with onion, celery, and spices fill the soup with a rich bouquet of flavors. Ketchup and apple cider vinegar add zesty notes, making this soup particularly appetizing. Potatoes provide heartiness, and green onions finish the composition with freshness. This dish is perfect for a cozy family dinner or a warming lunch in cool weather, offering delight in every spoonful.
