Okroshka with nuts is an original interpretation of the classic Russian cold soup, bringing a new texture and rich flavor to it. Roasted and crushed nuts add a pleasant oiliness and slight bitterness to the dish, while garlic gives it a spicy sharpness. The sour cream base makes the soup tender and harmonious, while fresh cucumber and radish add refreshing juiciness. This okroshka is perfect for the summer period when one desires lightness and coolness. It can be served as a standalone dish or as an interesting appetizer to main courses. The combination of fresh vegetables, nuts, and sour cream base will pleasantly surprise and provide new gastronomic experiences.
