Broth with beef meatballs

If meatballs are destined to be immersed in soup or broth, then you shouldn't mix in flour: the dish will then acquire an unattractive suspension. We sent beef meatballs into boiling broth - it can be vegetable , chicken, meat - and then strained this broth. It turned out simple, satisfying and beautiful, especially if you are not lazy and make homemade wheat croutons.

Prepare all the ingredients.

Combine the minced meat with the egg yolk. Add salt and pepper, and mix thoroughly.
- Ground beef: 500 g
- Egg yolk: 1 piece
- Salt: to taste
- Ground black pepper: to taste

Make small neat meatballs.

Boil the broth (it can be vegetable, beef, or chicken).
- Bouillon: 2.5 l

Send the meatballs to the boiling broth for 5 minutes.
- Ground beef: 500 g

Take out the meatballs with a slotted spoon.

Strain the broth.

Chop the greens finely.
- Green: to taste

Place the meatballs on plates and pour broth over them.

Sprinkle the ready soup with greens, serve with croutons or toasted bread.
