Kalya with smoked meats

Kalya is a Russian soup cooked with the addition of strong cucumber brine. Exactly the same is cooked in the cafe "Lira" in the city of Torzhok. Cook meat-bone broth on low heat with carrots, parsley root, and onion. Strain it. Add water to the strained broth until it reaches 5 liters.
- Beef bones: 375 g
- Parsley root: 12 g
- Onion: 200 g
- Water: 1400 ml

For the soup, cut all meat ingredients into strips and the potatoes into cubes. Finely chop the onion and carrot and sauté.
- Beef: 150 g
- Boiled and smoked beef: 450 g
- Carbonade: 280 g
- Semi-smoked sausage: 300 g
- Potato: 450 g
- Carrot: 213 g
- Onion: 200 g

Add spinach to the prepared broth and boil for 10 minutes. Add potatoes and boil for another 10 minutes. Add cucumbers, sautéed onions, and carrots and boil for 5 minutes. Then add smoked meats, brine, and boil for another 10 minutes until ready.
