Quick Solyanka

Quick solyanka is a fragrant and hearty dish of Russian cuisine that combines the rich flavors of smoked meats, pickles, and tomato tanginess. The history of solyanka traces back to ancient Russian taverns where it served as the perfect treat after a feast. This version cooks faster than the classic one but retains its rich character. A meat assortment sautéed with onions and carrots is infused with tomato paste and spices, then complemented by pickles and olives that add zest. Lemon adds a light citrus freshness. Served with sour cream and herbs, solyanka becomes a truly cozy home dish that warms and energizes.
