Miso soup with daikon, tofu and salmon

Chef of the capital's restaurant "Sakura Blossom" Hiroki Arakawa shared with the readers of Eda.ru a recipe for a real Japanese miso soup with salmon and tofu. One of the simplest, but at the same time incredibly tasty dishes in Japan. Everything is wonderful in this dish: from the aromatic and rich broth and silky pieces of tofu to the creamy and sweet salmon fillet. If you haven't tried this culinary masterpiece yet, don't waste your time!

Prepare dashi broth in a special pot and bring it to a boil. After boiling, scoop a small bowl of broth and dissolve the miso paste in it. Stir the paste until fully dissolved, then set the bowl aside.
- Water: 1.5 l
- Miso paste: 2 tablespoons
- Dashi broth dry: to taste

In a pan, lightly sauté the daikon and carrot until al dente. Then add pieces of salmon and tofu to the vegetables. Simmer on low heat until the salmon is half-cooked, then add the sauté to the broth.
- Daikon: 300 g
- Carrot: 1 piece
- Salmon: 300 g
- Soft tofu: 200 g

Pour the dissolved miso back into the pot and gently stir. Cook the miso soup with salmon on low heat with the lid on, avoiding boiling, or else the salmon meat will cook quickly and lose its shape.
- Miso paste: 2 tablespoons

Let the dish rest for a while, then pour the aromatic miso soup into bowls!
