Okra Soup

«Okra fruits are tetrahedral or octagonal capsules, tapering towards the top. In appearance, they resemble hot pepper pods. The pods can be long or short, narrow or wide. In Armenia, okra with relatively short pods mainly grows . Inside the fruit are seeds that look like small peas. Okra is used as a seasoning for meat dishes and soups mixed with other vegetables, as well as boiled and fried. Young fruits (ovaries) are most often used.

Boil the beef brisket until fully cooked, then strain the broth.
- Beef: 1 kg

While the meat is boiling, melt butter in a separate pot, add onion, bell pepper, peeled tomatoes, and fresh okra.
- Butter: 100 g
- Onion: 100 g
- Sweet pepper: 200 g
- Tomatoes: 200 g
- Okra: 400 g

Simmer all ingredients together for about 20 minutes.

Then add boiled meat to the vegetables and pour in the strained broth, season with salt, add pepper and bay leaf, bring to a boil and simmer a little.
- Beef: 1 kg
- Salt: to taste
- Ground black pepper: to taste

At the end, add coarsely chopped greens (cilantro, dill, oregano).
