In a large pot, bring lightly salted water to a boil. Blanch the basil for 10 seconds, then transfer it to ice. You can place a sieve over the bowl of ice water beforehand to make it easier to retrieve the basil.
- Basil: 2 bunchs
- Salt: to taste

Squeeze the basil and dry it with paper towels.

Place basil, parmesan, pine nuts, and garlic in a blender cup. Blend while gradually adding olive oil. Do not blend the pesto too long — the sauce should have an uneven, lively texture.
