Clean the onion, tomatoes, and garlic.
- Onion: 2 pieces
- Tomatoes: 6 pieces
- Garlic: 4 cloves

Dice the onion, cut the tomatoes into wedges, and chop the garlic.

In a saucepan or deep skillet with a thick bottom, sauté the onion in olive oil until soft, add garlic and fry for a couple more minutes, then add tomatoes and fry for a minute or two.

Reduce the heat and let simmer for 5–10 minutes or until the tomatoes are soft.

Salt, pepper, and blend with a hand blender until chunks remain.

Add the mint and leave on low heat for another minute.
