Sweet Onion and Cherry Tomato Sauce

Preheat the oven to 220 degrees.

Peel the onion and cut it into small cubes. Peel the garlic. Transfer to a fireproof skillet, drizzle with olive oil, season with salt and pepper, and bake in the oven for 35-45 minutes, stirring, until golden brown. If the skillet becomes too dry and starts to burn, add a little water. Reduce the temperature to 200 degrees, add raisins, stir, and cook for another 8 minutes.
- Sweet onion: 2 heads
- Garlic: 5 clove
- Extra virgin olive oil: 1 tablespoon
- Coarse salt: to taste
- Freshly ground black pepper: to taste
- Light raisins: 100 g

Then add the tomatoes and sprinkle with sugar. Stir and cook for another 5-7 minutes until the skin of the tomatoes starts to burst.
- Red cherry tomatoes: 400 g
- Yellow cherry tomatoes: 400 g
- Brown sugar: 1 tablespoon

Place the pan with vegetables over medium heat, pour in the wine, add salt and pepper. Mix well and let the wine evaporate. Serve warm.
