Place the spinach in a sieve and squeeze it well.

Put 0.25 cup of spinach, finely chopped arugula, and parsley in the blender. Blend everything well.

Add mayonnaise, horseradish, wine, and lemon and lime juices. Mix everything well. Add more wine to taste. Season with salt and pepper and transfer to a bowl.
