Satsebeli is translated from Georgian simply as "sauce", this dressing is the basic one in Georgian cuisine. It is prepared only from the ripest, sweetest, seasonal tomatoes. It is good for fried chicken, and for meat stew, and for fish. Satsebeli is served with any hot dish, almost spread on bread.

Tomatoes should be washed thoroughly.
- Tomatoes: 2 kg

Cut off the green stems and place them in a pot.
- Tomatoes: 2 kg

Pour water over the tomatoes until they are completely covered.
- Tomatoes: 2 kg

Bring to a boil, then reduce the heat to low and simmer the tomatoes for about an hour until they are soft and break down. Do not let them burn!

Remove the tomatoes from the heat.

Cool completely.

Pass the tomatoes through a fine sieve to remove the skin and seeds.

Add ground red pepper, ucho-suneli, khmeli-suneli, and crushed coriander to the resulting mass to taste.
- Ground red pepper: 10 g
- Utskho-suneli: 7 g
- Khmeli-suneli: 7 g
- Ground coriander: 7 g

Before serving, season with finely chopped cilantro.
