Blackberry and unripe grape sauce

Sauce from Imereti. Whatever grows at hand is used: blackberry bushes are planted as a hedge, and each veranda is entwined with grapes.

We clean the blackberry berries from the stems, place them in cheesecloth, and squeeze out the juice — the small seeds remain in the cloth. In principle, you can just mash the blackberries with a wooden spoon along with the seeds — it's not a big deal. However, it's better to squeeze the grapes through cheesecloth and throw away the remaining seeds and skin.

We mix blackberry and grape juice. We thoroughly crush cilantro, garlic, chili pepper, and salt in a mortar. In a pot, we mix the greens with the juice — it's ready. Blackberry is sweet, unripe grape is sour; it tastes incredibly good, especially with tabaka chicken.
