Blanch the tomatoes, peel them, and chop them. If using onion, chop that as well.

- Onion: 1 head

Heat oil in a pan, add onion, and cook on low heat, stirring, for 5 minutes until soft. If cooking without onion, add tomatoes right away and fry on low heat, mashing with a spatula, for 15 minutes.

Let the mixture cool, transfer to a blender and blend. Add sugar, salt, and mix again. Serve in a sauceboat or add to the main dish. Store the sauce in a closed container in the refrigerator.
