Tsakhton is a traditional dish of Ossetian cuisine that embodies the depth of Caucasian flavors. Its history traces back to ancient family recipes passed down through generations. The base of the sauce is sour cream, which adds tenderness and a creamy texture, while walnuts provide a pleasant nutty note. Cilantro, garlic, and chili pepper fill Tsakhton with aromas of freshness and spiciness, creating a multi-layered flavor bouquet. This sauce pairs perfectly with meat dishes, especially baked or fried meat, as well as vegetables and flatbreads. Its rich taste makes every dish more expressive, and the special preparation technique using a stone mortar allows for the nuances of the ingredients to shine through. Tsakhton is not just a sauce; it is a true culinary heritage of Ossetia.

1
To prepare the sauce, you can use a blender or (more authentically) a stone mortar. Wash and dry the herbs, peel the garlic, and remove the seeds from the hot pepper (you can also use ground pepper). If the ingredients are crushed in a mortar, add salt; if in a blender, this is not necessary.
