Whisk the yolk, mustard, and lemon juice in a bowl.
- Egg yolk: 1 piece
- Dijon mustard: 1 teaspoon
- Lemon juice: 1 teaspoon

Pour in cold vegetable oil in a thin stream, then add olive oil.
- Vegetable oil: 50 ml
- Olive oil: 50 ml

Once the mixture thickens, add truffle paste and truffle oil. Mix well and season with salt to taste.
- Truffle paste: 2 teaspoons
- Truffle oil: 5 ml
- Salt: to taste
