Balkan yogurt sauce sulini is a traditional Bulgarian sauce with deep historical roots in regional cuisine. It has a delicate, thick texture and a rich sour milk flavor with a slight spiciness that can be varied by adding spices and herbs. Sulini is a versatile addition to dishes: perfect as a dressing for fresh salads, a sauce for meat dishes and baked vegetables, as well as for sandwiches and burgers. In Bulgaria, this sauce is often used in summer cuisine due to its refreshing properties. Handcrafted, it retains natural flavor and beneficial bacteria for digestion.

Heat the milk in a pot, but do not boil it. The temperature should not exceed 50 degrees.
- Milk: 800 ml

Add starter culture or yogurt. Mix thoroughly.
- Bacterial starter: 130 g

Cover the milk with the starter culture and place it in a warm spot (near a radiator) for 6-9 hours. During this time, the milk should thicken sufficiently.

Place the resulting mass in a fabric bag (it can be made from linen or cotton fabric). Hang the bag over any container and leave it for 2-3 hours to let all the whey drain.

Can be used as a dressing for salads, a sauce for meat and baked vegetables, in burgers, and spread on sandwiches. Can be salted, add various spices and seasonings, mix with garlic and pickled cucumbers.
