Cut the thigh fillet into pieces and grind it through a meat grinder with a coarse grate. I recommend using chilled.
- Chicken thighs: 400 g

Lightly beat the egg. Mash 100 g of feta with a fork. Remove the tough stem from the spinach and slice the leaves into thin strips.

Mix minced meat, egg, spinach, and crumbled feta (I recommend Serataki) in a bowl, season with pepper and lightly salt. Knead the mixture well.

With wet hands, shape 4 round patties. Heat a pan with olive oil (can be replaced with sunflower oil) and fry them for 6 minutes on each side until cooked.
