Sandwiches with lightly salted salmon

4 servings

20 minutes

Sandwiches with lightly salted salmon are an elegant and simple dish of Russian cuisine, a symbol of refined taste and traditions. The history of lightly salted fish dates back to ancient times when the salting method helped preserve the freshness of products. Salmon, soft and tender, acquires spicy notes thanks to sea salt and black pepper, revealing the depth of its flavor. Served on fresh white bread, it creates a harmony of textures – the airy crumb of the bread contrasts with the density of the fish. This sandwich is perfect for morning tea, light snacks or festive gatherings. Its simplicity in preparation makes it accessible while its exquisite taste is indispensable in gourmet menus.

Cooking steps

So, I rinse the fish under cold water. I make a cut along the spine, separate the fillet, and remove all the bones.

    Required ingredients:
    1. Salmon200 g
  • 2

I use a knife to free the fillet from the skin.

  • 3

I cut the salmon fillet into thin strips (no thicker than 1–1.5 cm).

  • 4

I place the first layer of fish at the bottom of the dish (I use a ceramic pot). I sprinkle it with coarse sea salt and pepper (to taste, a pinch or two). I repeat the layers until the last piece, naturally sprinkling each layer with salt and pepper.

    Required ingredients:
    1. Sea salt10 g
    2. Ground black pepper10 g

I place the plate upside down, put a 2 kg weight on it. I leave it in a cool place overnight.
