So, I rinse the fish under cold water. I make a cut along the spine, separate the fillet, and remove all the bones.
- Salmon: 200 g

I use a knife to free the fillet from the skin.

I cut the salmon fillet into thin strips (no thicker than 1–1.5 cm).

I place the first layer of fish at the bottom of the dish (I use a ceramic pot). I sprinkle it with coarse sea salt and pepper (to taste, a pinch or two). I repeat the layers until the last piece, naturally sprinkling each layer with salt and pepper.

I place the plate upside down, put a 2 kg weight on it. I leave it in a cool place overnight.

In the morning, for breakfast, I prepare sandwiches for tea. I slice fresh white bread and put a piece of fish on top.
