Hanamaki is a remarkable creation of author cuisine, combining the airy texture of dough with aromatic notes of green onion. This recipe, inspired by Eastern traditions, creates a harmony of softness and light crispness, with a delicate, slightly sweet and spicy flavor. Hanamaki is perfect as an independent snack or as an addition to main dishes.

1
Sift 250 grams of flour into a bowl, add 0.5 teaspoon of baking powder, make a hole in the middle, add 1.5 teaspoons of sugar in the middle, add 1.5 teaspoons of yeast in the middle, and add 75 ml of warm water (40 degrees) in the middle. Gently mix with chopsticks. Cover and let sit for 15 minutes.
- Wheat flour: 250 g
- Baking powder: 0.5 teaspoon
- Sugar: 1.5 teaspoon
- Dry yeast: 2 g
- Water: 165 ml

After 15 minutes, the dry yeast activates. Carefully mix everything. Add 90 ml of warm water (do not pour all the water at once; add a little at a time while stirring — depending on the flour, the amount of water needed may vary). When the dough is loose, add a bit more water and stir until it starts to stick to your hands. Dust the table with flour and knead the dough for 5 minutes until it becomes elastic.
- Water: 165 ml
3
Preheat the oven to 50 degrees for 5 minutes and turn it off.
4
Pour some flour into a bowl, place the dough in it, cover with a damp cloth, and put it in the oven for 30 minutes.
- Wheat flour: 250 g
5
Meanwhile, wash and clean the onion, cut into thin pieces (4 tablespoons), wrap in a napkin, and squeeze to absorb excess moisture.
- Green onions: 2 bunchs
6
After 30 minutes, take out the dough - it will double in size. Sprinkle flour on your hands and punch the dough to release the gases.
7
Dust the table with flour and roll out a rectangle of 30x35 cm. Spread 3 tablespoons of oil on top, sprinkle with salt (1/4 teaspoon), and evenly distribute the onion. Roll the dough into a tight roll. Then cut the roll into small rolls. Join 2 rolls together, turn them 180 degrees, and pinch the ends — the entire cooking process is clearly visible in the video.
- Wheat flour: 250 g
- Vegetable oil: 3 tablespoons
- Salt: 0.3 teaspoon
- Green onions: 2 bunchs
