Preheat the grill. Place the pancetta on the rack and grill for 3-4 minutes until crispy. Flip once. Place on a paper towel and dry.

To prepare the seasoning, pour the yolks into a convenient container, add vinegar, mustard, finely chopped garlic, spices to taste, and mix. Gradually add olive oil while stirring. After a minute, you will notice that the mixture starts to thicken. Begin to add oil more actively while constantly stirring, but not too quickly, as the mixture may curdle.
- Chicken egg: 2 pieces
- White wine vinegar: 1 tablespoon
- Dijon mustard: 1 tablespoon
- Garlic: 1 clove
- Olive oil: 200 ml
- Salt: to taste
- Ground black pepper: to taste

Toast the bread under the grill and spread the prepared seasoning on it. Divide the salad between two slices of bread, add sliced tomatoes and some finely chopped chives. Add seasonings to taste.

- Tomatoes: 1 piece
- Chives: 2 tablespoons
- Salt: to taste

Place slices of cooked turkey on top, cover with slices of bread with the spread side up. Add salad, then crispy pancetta, and sprinkle with chives. Cover with the remaining slices of bread and gently press down. Cut each sandwich into four triangles, secure with a toothpick to hold together. Arrange on serving plates and sprinkle with parsley.
