Broccoli baked with almonds is an elegant dish of European cuisine that combines the tenderness of the vegetable with crunchy nuts and a fragrant dressing. Broccoli cut into neat florets is infused with a sauce made from garlic, ginger, chili, olive oil, and soy sauce, enhancing its flavor under high heat. Baking gives it an appetizing golden crust while toasted almonds add a hint of sweet crunch. This dish is perfect as a standalone treat or as a side to meat and fish. It features a balance of spiciness, sweetness, and umami while retaining the health benefits of broccoli. Its ease of preparation makes it an excellent choice for sophisticated dinners and cozy family meals.

1
Preheat the oven to 210°C.
2
Take one large broccoli, wash it thoroughly, and cut off the thick stem. Then cut the broccoli into florets, keeping the stems on them. Cut each floret in half and then in half again - this way, you'll have small broccoli bouquets with long stems.
- Broccoli cabbage: 1 piece
3
Prepare the dressing by mixing all the ingredients: cut garlic cloves in half, grate ginger root, chop chili, add olive oil and soy sauce; then drizzle over broccoli. Then mix thoroughly by hand to ensure all broccoli is coated with the dressing.
- Garlic: 6 cloves
- Ginger root: 2 tablespoons
- Chili pepper: 1 teaspoon
- Olive oil: 2 tablespoons
- Soy sauce: 1 teaspoon
4
Place the broccoli on a baking sheet or in a wide baking dish and put it in the oven.
5
Place the almonds on a separate baking sheet and put it in the oven one rack below the broccoli.
- Almond: 50 g
6
Bake the broccoli for 15-20 minutes until a light golden-brown crust forms. The almonds should be removed earlier as they roast (I slightly overcooked the almonds the first time, so watch them!)
7
Chop the almonds, place the broccoli on a plate, add salt and your favorite spices if needed, and sprinkle the broccoli with almonds. It can be served!
- Salt: to taste
