Salad with nectarine and cheese is a harmonious blend of sweetness and spiciness typical of European cuisine. Pour water into a saucepan. Cut the plums in half and remove the pit. Place the plums in water and let them cook until soft, then reduce the heat and start mashing the plums. Strain the mixture through a sieve and mash the pulp. You should have plum puree. Discard the tough skin. Transfer to a bowl and refrigerate.

When the puree has cooled, add butter, vinegar, and 1 tablespoon of water. Whisk it. Add salt to taste. Place the mixture in the refrigerator for 10 minutes.
- Olive oil: 5 tablespoon
- Balsamic vinegar: 4 ml

Slice the nectarines into wedges, remove the pit. Cut the cheese and almonds. Place the lettuce leaves, add cheese, nectarines, and almonds, then drizzle with dressing.
