Cut the potatoes into 4 pieces and place them in a pot of salted water. Add 3 tablespoons of mint, bring to a boil, reduce the heat, and cook until tender for about 15 minutes. Drain and transfer to a large bowl.
- Young red potatoes: 800 g
- Fresh mint: 1 bunch

Leave 2 tablespoons of chopped mint, 2 tablespoons of cheese, and 2 tablespoons of chopped olives. Add the rest to the hot potatoes. Add olive oil, salt, and pepper. Sprinkle with the remaining mint, cheese, and olives on top and serve immediately.
