Asian Beef Salad with Sesame Dressing

Asian cooking techniques seem to be specially designed to save time on cooking. Take, for example, this beef salad: quickly fried meat, a quick sauce - and pleasure that is three times greater than the effort.

Sear the beef tenderloin on a hot grill brushed with vegetable oil until a crust forms on the surface while keeping the inside medium-rare.
- Beef tenderloin: 80 g
- Olive oil: 1 teaspoon

Finely chop the garlic, place it in a sauce bowl, add sugar, sesame, mirin, and Mitsukan rice vinegar. Put it on the heat, add a little soy sauce, and bring the sauce to a boil, stirring occasionally.
- Garlic: 2 cloves
- Sugar: 1 teaspoon
- Sesame seeds: 45 g
- Mirin: 0.5 glass
- Rice vinegar: 2 teaspoons
- Soy sauce: 1 tablespoon

When the sauce boils, it should be removed from the heat and poured into a bowl placed on ice to cool it quickly until it thickens.

Place a mixture of corn salad and arugula in a bowl, add a few leaves of romaine lettuce. Slice cucumber and radish into rounds. Cut half a chili pepper into rings. Add blanched Kenyan beans in boiling salted water. Cook the beans for a minute or two — and that's enough.

Now slice the beef. The meat should be cut against the grain for a more desirable and easier-to-eat texture.

Add slices of beef to the salad, season with salt and pepper, and add olive oil. Carefully pour in the sesame dressing and mix. Mix by hand — very gently, trying not to crush the salad leaves.

Place the prepared salad on a plate and garnish with finely grated carrot and celery stalk. The grated carrot and celery should be soaked in cold water for about an hour beforehand. This will make them crispy and hold the shape of curls.
