Prepare all the ingredients.

Melt brown sugar in a pan. Add nuts and quickly stir to coat them in caramel.
- Brown sugar: 80 g
- Walnuts: 150 g

Remove the core from the apples and slice them thinly on a mandoline.

Sprinkle the apples with lemon juice to prevent them from browning.
- Lemon juice: 50 ml

Also slice the cucumber and celery thinly.
- Pickles: 280 g
- Celery stalk: 280 g

Mix apple, cucumber, celery, and grapes.
- Green apples: 280 g
- Green seedless grapes: 200 g

For the dressing, mix apple juice with 2 tablespoons of lemon juice and honey.
- Apple juice: 80 ml
- Lemon juice: 50 ml
- Honey: 1 teaspoon
