Peel the carrot and grate it on a coarse grater. Finely chop the leek stem. Cut the dried apricots into small pieces. Mix the carrot, leek, apricots, and dried cranberries in a large bowl.

Finely chop the red and green cabbage (you can chop it in a food processor). Add it to the other ingredients and mix.
