Pour lime juice and fish sauce into a jar with a screw cap, add sugar and Chinese hot sauce, shake well, and salt if necessary.
- Lime juice: 80 ml
- Fish sauce: 60 ml
- Sugar: 0.3 glass
- Chinese hot sauce: 2 teaspoons
- Salt: to taste

Peel the papaya, cut it in half lengthwise, and remove the seeds. Slice it thinly or grate it.
- Green papaya: 1 piece

Put the tomatoes in boiling water for 2 minutes to soften the skin, remove it, then cut the tomatoes into quarters and remove the seeds. Chop the tomato flesh.

Chop the chili, removing the seeds. Mix with tomatoes and papaya, add grated ginger and chopped herbs. Shake the dressing jar again and pour it over the salad.
