Olivier with smoked duck

This is how Olivier is prepared in the Moscow wine bar Bigati Bar.

To prepare mayonnaise: place the yolks in a bowl, add salt, sugar, and mustard. Mix all ingredients well using a mixer.
- Egg yolk: 0.5 piece
- Salt: to taste
- Sugar: to taste
- Mustard: to taste

Carefully add vegetable oil to the yolk mixture while mixing with a mixer. Then repeat the same with olive oil.
- Vegetable oil: 25 ml
- Olive oil: 5 ml

When the mixture thickens, add vinegar and continue whisking to the desired consistency. Store the finished mayonnaise in the refrigerator.
- Apple cider vinegar: 1 teaspoon

Boil potatoes, carrots, shallots, pickles, duck thigh fillet and boiled chicken egg into small cubes of 0.5x0.5 cm. Mix with mayonnaise, add peas, salt and pepper to taste.
- Boiled potatoes: 35 g
- Boiled carrots: 15 g
- Shallots: 5 g
- Pickles: 25 g
- Smoked duck breast: 5 g
- Chicken egg: 1 piece
- Green peas: 15 g
- Salt: to taste

Place the salad on a plate using a culinary ring. Garnish with thin slices of smoked duck, chopped scallions, and quail egg.
