Wash the potatoes with a brush, place them whole in a pot of salted boiling water, bring to a boil and cook until soft, 25-30 minutes.
- New potatoes: 1 kg

Meanwhile, cut the bacon into thin strips and fry in a dry heated pan over medium heat until the fat is rendered and the bacon is crispy. Place the cooked bacon on paper towels and reserve the fat.

Cut the peeled onion into very thin quarters. Slice the cucumbers into thin rounds. In a warm skillet with fat, pour in vegetable oil and vinegar. Add mustard, salt, and pepper; mix well. Drain the water from the cooked potatoes, let them cool slightly (be careful not to burn yourself), and cut them into pieces before placing them in a bowl. Pour the hot dressing over the potatoes and let it cool down. Mix the potatoes with onions, cucumbers, and crumbled bacon by hand and serve.
