Dzavar risotto with mushrooms and cream

Dzavar is a cereal made from lightly boiled and then dried grain. A special type of mountain wheat, from which a large number of interesting dishes can be prepared.

Rinse the beans and boil until cooked, then drain in a sieve.

In a small pot with a little olive oil, sauté finely chopped onion, add spices and nutmeg to taste, chopped mushrooms and dzavar. Mint can also be added for an interesting flavor.

Pour in the cream and let it simmer until thickened. If you don't like the consistency too thick, you can add a bit of vegetable broth.
