30 minutes
Vegan pasta in a skillet is a modern take on the classic Italian cuisine, adapted for plant-based eating. This recipe features a rich creamy sauce made from potatoes and cashews that gives the dish a velvety texture without dairy. Miso paste and spicy tomato sauce add depth of flavor, blending the light sweetness of vegetables with savory notes. Gomiti pasta perfectly holds the sauce, creating a harmonious balance of textures. This dish is great for both everyday dinners and entertaining guests, showcasing that vegan cuisine can be not only healthy but also incredibly delicious. Quick preparation makes it an excellent choice for a busy day, and the ability to adjust the sauce's consistency allows customization to personal preferences.
