Melt butter in a pan, pour in milk, when it boils, add grated cheese (parmesan or pecorino, or any hard or semi-hard cheese), reduce heat, stir thoroughly until a homogeneous medium-thick mass is obtained, then add grated truffle, mix, then add slightly undercooked linguine and cook on low heat, stirring, for about 1 minute.
