Pizza on unleavened dough with mushrooms and blue cheese is a refined blend of simplicity and elegance in Italian cuisine. Its history is rooted in traditional recipes where the dough is made without yeast, allowing the main flavor to shine without excess airiness. The delicate aroma of fried mushrooms complements the richness of the tangy blue cheese, creating a delightful palette of flavors. Crispy edges soaked in olive oil, tender ham, fresh tomatoes, and olives form a harmonious ensemble. This pizza is the perfect choice for gourmets who appreciate rich taste without unnecessary heaviness. It is pleasant to serve for cozy family dinners as well as for exquisite gastronomic evenings, surprising guests with the combination of simplicity and sophistication. The aromas of fresh herbs complete the dish, leaving an unforgettable impression.

1
To prepare the dough, pour flour into a deep container (salad bowl or pot), make a well in the center, and gradually pour water into it (if possible, so that the water stays only in the center), then add 2 tablespoons of olive oil to the water.
- Wheat flour: 250 g
- Water: 150 ml
- Olive oil: 5 tablespoon
2
Knead the dough until smooth, add salt, then roll the dough into a ball.
3
Place the dough in a container and cover tightly with plastic wrap, leave for 20 minutes.
4
Slice the mushrooms and fry until half-cooked (I slice the mushrooms into half slices, and when frying, there shouldn't be too many mushrooms; in their raw state, they should cover the bottom of the pan no more than 1-1.5 cm, otherwise, the mushrooms will be stewed instead of fried; it's better to use a wide-bottomed pan.)
- Champignons: 10 pieces
5
Roll out the dough and place it on the baking sheet (previously greased with olive oil).
- Olive oil: 5 tablespoon
6
Cut the ham (into strips), tomatoes (the thinner, the better), olives. You can replace (or add) the ham with sautéed bell pepper.
- Ham: 150 g
- Tomatoes: 2 pieces
- Pitted olives: 100 g
- Sweet pepper: 1 piece
7
Place the ingredients on the dough in the following order: tomatoes, sautéed mushrooms, ham, olives, and drizzle everything with 2 tablespoons of olive oil.
- Tomatoes: 2 pieces
- Champignons: 10 pieces
- Ham: 150 g
- Pitted olives: 100 g
- Olive oil: 5 tablespoon
8
Fold the edges of the dough to prevent juice from leaking out during baking, and brush the folded edges with raw egg yolk or white (this will result in a regular crust around the pizza). You can also simply brush the edges with milk.
- Chicken egg: 1 piece
9
Place the pizza tray in a preheated oven at 200 degrees for 15 minutes.
10
In these 15 minutes, grate the hard cheese and chop the greens, then mix the cheese and greens (to prevent the greens from drying out in the oven).
- Hard cheese: 200 g
- Parsley: 1 bunch
- Dill: 1 bunch
11
After these 15 minutes, sprinkle the pizza with a mixture of cheese and greens, crumble blue cheese on top, and return it to the oven for another 5 minutes.
- Hard cheese: 200 g
- Blue cheese: 70 g
