Thin Crispy Crust Pizza

Pizza with a thin crispy base is a masterful combination of simple ingredients turned into culinary delight. Originating from Italy, this recipe conveys the spirit of traditional Neapolitan cuisine where the dough is the main character. Light and airy yet crispy crust forms thanks to the combination of kefir, sour cream, and baking soda that give tenderness to the dough. The filling is a harmony of flavors: sweet onion, spicy smoked sausage, gooey mozzarella cheese, and rich mayonnaise complemented by aromatic Provençal herbs. Baked to a golden crust, this pizza has a balance of crunchiness and juiciness, making it perfect for cozy evenings as well as festive gatherings.

Mix kefir and sour cream with a fork, add salt and baking soda - foam will form in 1-2 minutes.
- Kefir: 150 ml
- Sour cream: 2 tablespoons
- Salt: 0.3 teaspoon
- Soda: 1 teaspoon

Add sugar and margarine.
- Sugar: pinch
- Margarine: 50 g

Add flour and knead a very soft (possibly slightly sticky) dough.
- Wheat flour: 1.5 glass

Place it on a greased baking sheet and flatten it with your hands (the layer is thin).

Layer the filling (I have onion, smoked sausage, cheese (I prefer to use mozzarella), mayonnaise).

Mayonnaise must be the last layer (a thin mesh from the bag). I really like 'Provençal herbs' - sprinkle a pinch.
