For the pasta, sift the flour, add the yolks, salt, and saffron.
- Wheat flour: 350 g

We mix the dough, gradually pouring in water using a mixer or special attachment. Gradually add oil until a ball forms.

Cover the dough with a plastic bag and let it rest for 30–40 minutes at room temperature.

Place the dough ball on a floured surface and cut it in half.

Roll each half to a thickness of 1 mm and sprinkle with flour.

Roll the prepared pancakes into a loose roll and cut them crosswise. Stack the resulting strips on top of each other, generously dusting with flour, and cut them into shorter pieces.
