Preheat the oven to 180 degrees. Heat half of the olive oil in a large skillet and fry the minced meat. Transfer from the skillet. Add the remaining oil and sauté the finely chopped onion and celery until soft. Return the meat to the skillet and add tomatoes, paste, herbs, and sugar, bring to a boil, reduce heat, and simmer covered for 20 minutes.
- Olive oil: 1 tablespoon
- Ground beef: 750 g
- Onion: 1 head
- Celery stalk: 2 pieces
- Canned tomatoes: 400 g
- Tomato paste: 2 tablespoons
- Provencal herbs: 1 tablespoon
- Sugar: 1 teaspoon

Melt the butter in a saucepan over low heat. Add the flour and sauté for 1 minute. Remove from heat and gradually pour in the milk. Return to heat, bring to a boil, and stir constantly until thickened. Reduce heat and cook for 2 minutes.

- Wheat flour: 3 tablespoons

Grease a fireproof dish with oil. Layer a third of the meat sauce, then place 1 layer of lasagna sheets on top, followed by a third of the béchamel sauce. Repeat the layers twice and top with grated cheese.
