Prepare all the ingredients.

For the aioli sauce, finely chop the parsley leaves and garlic.
- Parsley: 1 bunch
- Garlic: 2 cloves

Whisk the yolks with lime juice, mustard, salt, and pepper using a mixer.
- Egg yolk: 2 pieces
- Lime: 0.5 piece
- Dijon mustard: 1 teaspoon
- Salt: 1 tablespoon

Continue whisking and slowly add the olive oil (150 ml) in a thin stream.
- Olive oil: 200 ml

In a large pot, bring water with salt to a boil at a ratio of 1 tablespoon of salt per 1 liter of water.

Put the noodles in a pot and boil until cooked, about 1 minute.
- Buckwheat noodles: 150 g

Drain the noodles in a colander and quickly rinse under cold water. Return the noodles to the pot and toss with 1 tablespoon of olive oil.

Clean the shrimp, heat the remaining oil in a pan, and quickly fry the shrimp for 30 seconds on each side.
