Fried Khinkali

Fried khinkali is a delightful dish of Azerbaijani cuisine, consisting of juicy meat dumplings with aromatic spices, fried to a golden crust. The origins of this recipe trace back to Caucasian traditions, where khinkali symbolize hospitality and family gatherings. The classic dough made from flour and water becomes a soft shell for spicy beef filling with cilantro, garlic, and khmeli-suneli. Prepare the dough: add water to the wheat flour, salt it, and mix everything well. Let the dough rest.
- Wheat flour: 400 g
- Water: 150 ml
- Salt: to taste

Finely chop the cilantro and garlic, mix with the minced meat, add adjika, khmeli-suneli, pepper, salt to taste, and broth. Mix the resulting mixture thoroughly.
- Coriander: 10 g
- Garlic: 10 g
- Ground beef: 400 g
- Dry adjika: 3 g
- Khmeli-suneli: 3 g
- Ground red pepper: 3 g
- Salt: to taste
- Chicken broth: 150 ml

Roll out the dough for each khinkali into a circle with a diameter of 20 cm. Place the prepared filling in the center of each piece. Shape the khinkali.

Place the khinkali in salted boiling water. Cook for exactly 6 minutes. Then fry them at 180 degrees until golden brown.
