Dietary lasagna with lavash is a light interpretation of the classic Italian dish, adapted for those who watch their diet. Instead of traditional pasta sheets, Armenian lavash is used, making the dish airy and tender. Aromatic mushrooms, juicy chicken mince, and tomato paste create a rich flavor complemented by creamy sauce and melted hard cheese. The origins of lasagna trace back to Medieval Italy where it was layered with various fillings. This version retains the multilayered structure but with lighter ingredients, making it ideal for everyday meals. The dish turns out juicy with a harmonious blend of creamy texture and mushroom notes, perfect for family dinners or special occasions.

For the filling: finely chop the mushrooms, sauté in a non-stick pan without oil until they release their juice and it evaporates.
- Champignons: 1 kg

Finely chop the onion, grate the carrot on a coarse grater, sauté everything together in a non-stick pan without oil until the onion is translucent and the carrot is soft, then season with salt and pepper.
- Onion: 1 piece

Add half an onion with carrots to the mushrooms, sauté together for a few more minutes, and season with salt and pepper if necessary.

Fry the minced meat in a dry pan for a few minutes until it turns white, season with salt and pepper, add your favorite spices, the remaining half of the onion and carrot, and tomato paste, and simmer everything together for a few more minutes.

Grate the cheese on a coarse grater.
- Hard cheese: 300 g

Assembly: cut the lavash to the size of your rectangular mold (1 pack of lavash was enough for two layers, and there was still an extra piece left, so for 5 layers of lavash I had to open 3 packs, but there are still plenty of scraps left).

Layering: lavash - minced meat - cheese - lavash - mushrooms - cheese - lavash - minced meat - cheese - lavash - mushrooms - cheese - lavash.

Pour cream over the lasagna so that all the lavash is soaked.
- Cream 10%: 200 ml

Evenly distribute the remaining cheese on top.

Place in a preheated oven at 180°C and bake for 30 - 40 minutes (I baked for about 20 minutes since the filling was almost ready).
