Chop the onion finely, fry in vegetable oil, and transfer to a pot.

- Vegetable oil: 3 tablespoons

Cut the meat into small pieces and fry in the same oil, then set aside with the onion, add a little water, and simmer for about an hour, adding spices and finely chopped garlic, pouring water so that it covers the meat only halfway.

While the meat is stewing, clean and chop the carrots, potatoes, and peppers. When the meat becomes tender, add them along with tomatoes and juice (if not diced, do this beforehand), mix everything well, add spices if necessary, and stew until the potatoes are fully cooked (15-20 minutes).
