Cauliflower with white beans in the oven

Baked cauliflower with white beans is a harmonious combination of tender vegetables and nutritious legumes infused with the aromas of spices and garlic. This recipe has European roots, reflecting traditions of using simple yet flavorful ingredients. White beans add creaminess and tenderness while cauliflower brings lightness and pleasant sweetness. The sour cream sauce with egg makes the dish juicy, and the spices add a kick. Baking in the oven unites all components, creating a golden crust and deep, rich flavor. It’s an ideal option for a light dinner or side dish that pairs well with greens and fresh vegetables. The dish is versatile—spices can be experimented with to add new aromatic notes. It is not only delicious but also nutritious, perfectly suited for balanced eating.

1
Soak the beans overnight.
- White beans: 400 g
2
Boil the beans until cooked. I usually cook white beans for no more than 40 minutes.
- White beans: 400 g

Meanwhile, we divide the fresh cauliflower into florets. Then we boil the cauliflower for 2-3 minutes in boiling salted water.
- Cauliflower: 600 g
- Salt: to taste

We mix sour cream, egg, salt, and spices (I usually use curry, coriander, and a pepper mix). We squeeze in garlic. I add 2-3 cloves for half a kilo of sour cream - more for aroma than strong flavor.
- Sour cream: 500 g
- Chicken egg: 2 pieces
- Salt: to taste

Place in an oven preheated to 180 degrees for 20-30 minutes. The dish can be covered with a lid or foil. If not covered, the top will bake and dry out a bit - it also tastes good, so I recommend you decide based on your preferences.
- Sour cream: 500 g
