Wash the whole duck under water, season with salt and pepper, drizzle with a little olive oil, and generously coat with two tablespoons of honey — neutral mountain or floral honey is best.
- Ground black pepper: to taste

Chop a few sprigs of fresh thyme and rub them on the duck. Peel a head of garlic, two medium onions, and two medium carrots, cut them into large pieces, place them in a saucepan on top of the duck, pour everything with red wine (100 ml), season with salt and pepper again, and put it in the oven at 160 degrees. Braise for 80 minutes.

After that, separate the duck meat from the bones and heat it in a mixture of two sauces: hoisin and raspberry jam (mix the jam and sauce and simmer until the mixture turns into a caramel with a bright flavor and aroma).

Cut the burger bun in half lengthwise, spread the bottom part with a cream made of cream cheese and cream (mix in a ratio of 2 parts cream to 3 parts cheese).

Next, place finely chopped iceberg lettuce on the bottom part of the bun, followed by apple cut into thin strips.
