Ragout of chard, sweet potato, and peas is a vibrant and nutritious dish of European cuisine that combines sweetish sweet potato, tender chard, and the spiciness of cumin. This dish resembles traditional vegetable ragouts popular in Mediterranean countries but has a unique emphasis on the nutty note of peanuts. The thick, aromatic texture of the ragout perfectly warms and satisfies, while the mild heat of chili pepper gives the dish a distinctive character. The ragout can be served as a standalone dish or accompanied by fresh bread, rice, or quinoa. It is perfect for a vegetarian menu, combining healthy ingredients rich in vitamins and fiber. This ragout is an ode to the simple yet harmonious flavors of nature.
